KIP-1296 — Shadow Jetty dependencies to decouple from SLF4J version conflict

Proposes shading (shadowing) Jetty's transitive dependencies within the Kafka distribution to decouple Kafka's SLF4J 1.x from Jetty 12's newly required SLF4J 2.x fluent API. Jetty 12 (introduced in KIP-1013) declared a dependency on SLF4J 2.x, which Kafka excludes and replaces with 1.7.x; starting with Jetty 12.0.30, Jetty production code calls SLF4J 2.x-only APIs, causing NoSuchMethodError at runtime.
